1 cup evaporated skim milk -- well chilled
1 teaspoon vanilla essence
1/2 teaspoon cinnamon
1 tablespoon gelatin
1/4 cup boiling water
2 tablespoons freshly squeezed orange juice
1 cup raspberries -- fresh or frozen
1 tablespoon apple juice concentrate
Beat the milk, vanilla and cinnamon until thick, creamy and doubled in size. Dissolve the gelatine in boiling water, add the OJ and fold in the milk mixture. Add the raspberries and apple juice concentrate. Pour the mixture into a mould or dessert goblets and refrigerate until firm.
