Chicken with Raspberry Vinegar

1/2 lb Chicken breast fillets
Salt & pepper to taste
Vegetable cooking spray
2 tb Butter
1 tb Chopped scallions
2 tb Raspberry vinegar
1 tb Water


Sprinkle each fillet with salt and pepper. Spray skillet with cooking spray. Add butter & heat. Saute chicken breasts for a few minutes on each side until opaque. Set aside and keep warm. Sprinkle scallions in pan, saute for a few seconds, then add raspberry vinegar and water. Stir well to loosen all cooking residue. Cook for one minute, return breasts to pan and continue to cook until done (another few minutes), turning once. Serve immediately with sauce.
