Cranberry-Orange Sauce

1 pound fresh cranberries
1 orange
--zested, peeled and sectioned
4 cups sugar
1 teaspoon vanilla -- optional

Grind the cranberries and orange sections (with zest) together with a food grinder or food processor. Retain the juice. Combine the fruit, juice, sugar, and vanilla in a medium-sized bowl. Cover; refrigerate at least 12 hours. Add more sugar if it is too tart.
