Passover Blueberry Muffins
1 c Sugar
1/2 c Oil
1/2 c Cake meal
1/4 c Potato starch
1/4 ts Salt
1 pk Frozen blueberries
Mix sugar and oil, add eggs and beat mixture well.
Fold in dry ingredients and blueberries (all this can be done in food processor). Place in muffin tin.
Sprinkle tops with cinnamon/sugar. Bake at 325 degrees for 45 minutes. Makes 12-15 muffins.
