Low-calorie Blueberry Pudding

1 Envelope unflavored gelatin
1/4 c Water
2 Eggs, separated
1/3 c Sugar
1/4 ts Salt
1 c Skim milk
1 ts Vanilla
1 ts Grated lemon rind
1 c Fresh blueberries
2 tb Sugar


Stir gelatin into water and set aside. Combine egg yolks, 1/3 cup sugar, salt and milk in saucepan. Cook and stir over low heat for 3 minutes. Add gelatin, vanilla and lemon rind. Cool until pudding begins to thicken. Fold in blueberries. Beat egg whites until stiff peaks form. Slowly beat in 2 tablespoons sugar. Fold into pudding. Chill.
