Quick Side Dish of Beans

4 c Cooked white beans, heated*
3 To 4 tb red onion, finely chopped
3 tb Each olive oil and raspberry vinegar
Fresh black pepper, to taste

*Use any white beans: navy, cannellini, white kidney beans, etc.. Two 19 ounce cans, drained and rinsed well, equals 4 cups.

Heat the beans in about 1 cup of water. Drain well and toss with the onion. Whisk together the oil and vinegar and dress the beans. Top with a grind of pepper.
