Baked Beans

1 pound navy beans
1 medium onion -- chopped
1/4 pound salt pork -- chopped
3 tablespoons molasses
1 tablespoon cider vinegar
1 cup brown sugar
1 teaspoon dry mustard
1 teaspoon Worcestershire sauce
1/4 cup maple syrup
black pepper

Soak the beans overnight in water. Drain.

In a bean pot, put about a third of the beans. Add about a third of the onion and salt pork. Repeat for the second third and again for the last. Add the remaining ingredients.
Add water to the mix until it just covers the beans.

Heat oven to 300F and cook the beans covered for five hours. Stir. Cook another hour uncovered. If they are too hard, continue to cook. If the beans are too dry, add a little water and stir. They should remain moist.
