Soynuts

1 cup dried soybeans
1 quart cold water
1/2 teaspoon salt
cooking spray


Makes 2 1/2 cups

Rinse beans thoroughly. Soak overnight in refrigerator, or 3 -4 hours on the counter. Drain, and pat dry.

Preheat oven to 350F. Spray a baking sheet with cooking spray. Place beans in a single layer on the baking sheet. Bake for 35 to 45 minutes, stirring often, until well browned. Remove from oven and salt or season to taste.

If you want to serve them hot, reheat at 325F.
