Quick Lentil Side Dish Or Soup T-fal 2 cups dried lentils -- picked over and rinsed
1 bay leaf
1 large garlic clove or more -- minced
1 tablespoon oil
6 cups water
2 tablespoon (or 3) dijon mustard
1/2 cup finely minced fresh parsley
1/2 teaspoon salt -- or to taste
Combine the lentils, bay leaf, garlic, onion, oil and water in the pressure cooker. Bring up to full pressure, reduce heat to stabilize, and cook for 7 minutes. Release pressure. If lentils are not done, lock the lid back in place and return to high pressure for a minute or two. Remove the bay leaf. If serving as a side dish, drain off most of the cooking liquid.
