Mediterranean Sandwiches 1 cn (15 ounces) garbanzo beans
1/2 c Sesame seed
1 Cl Garlic, cut in half
3 tb Lemon juice
1/4 ts Salt
16 One-half-inch diagonal slice French bread
2 tb Chopped fresh cilantro
1/2 c Chopped bell pepper
1/2 md Cucumber, thinly sliced
1 c Alfalfa sprouts
Throughout the Middle East, hummus, made from garbanzo beans, is
common. Drain beans, reserving 1/3 cup liquid. Place reserved bean
liquid, the sesame seed and garlic in blender or food processor.
Cover and blend on high speed, or process, until mixed. Add beans,
lemon juice and salt. Cover and blend on high speed, or process,
scraping sides, if necessary, until of uniform consistency.Spread
about 2 tablespoons bean mixture on each slice bread. Sprinkle
cilantro and bell pepper on 8 of the slices bread. Top with cucumber
