Giant Beans Appetizer (Gigantes Plaki)

10 oz Dry fava, large elephant or lima beans
1 1/2 c Good oilive oil
1 md To 1 1/2 md onions, chopped
1 Clove garlic, thinly sliced
1 md Carrot, diced
1 Stalk celery, diced
1 md Potato, peeled and chopped
1 c Water
1 1/2 ts Salt
1 1/2 ts Sugar


Soak beans overnight in water to cover. Drain. Place beans in a saucepan with water to cover over medium-high heat. When water starts to boil, reduce heat to low and simmer 45 minutes. Drain and set aside.

Heat olive oil in a saucepan. Add onion and garlic and saute' for 2 minutes. Add carrot and saute' for 2 minutes. Add celery and potato and saute' for 2 minutes.

Add the beans, tomatoes, 1 C. water, salt and sugar and cook over low heat for 1 hour or until beans are tender, stirring occasionally. Cool and serve at room temperature. Yields 12 servings.
