Garlic Bean Salad

45 ounces cannellini or green beans drained
3/4 cup parsley -- chopped
1/2 cup green onion -- chopped
1 clove garlic -- minced
6 tablespoons olive oil
4 tablespoons cider vinegar
salt
ground pepper


Put drained beans in a glass or ceramic bowl; mix in parsley, onion, garlic, oil, vinegar and seasonings.

Mix well, cover with plastic wrap or foil and refrigerate at least 4 hours or overnight.
