1 pound marrow beans
2 tablespoons olive oil
2 tablespoons chopped onions
1 crushed garlic clove -- (optional)
1/4 cup tomato sauce
2 tablespoons tomato paste
1 teaspoon cumin seed
1 pinch cayenne pepper
2 tablespoons chopped parsley
Cook beans according to directions on package. Drain. In large saucepan, heat the oil. Add onions and optional garlic (if using) and cook until slightly browned.
Add tomato sauce, tomato paste, cumin, pepper, and beans. Mix gently. Cover and simmer for 10 minutes. Correct seasoning. Sprinkle with parsley. Serve hot.
