Creamy Bean Dip
4 Firm tomatoes; finely chopped
1 sm Onion; finely chopped
1 tb Freshly chopped coriander
1 Fresh green chilli; finely chopped - optional
1 Lime; juice of
Salt and freshly ground black pepper
2 ts Oil
1 225 gram can refried beans
50 g Cheddar cheese; grated (2oz)
50 g Cream cheese; (2oz)
142 ml Single cream; (5fl oz)
Mix together the tomatoes, onion, coriander, chilli (if using), lime
juice and seasoning, cover and place in the refrigerator to chill.
Heat the oil in a pan, add the beans and heat gently for 2-3 minutes,
stir in the cheddar and cream cheese and heat gently until melted. Remove
from the heat and allow to cool for 15 minutes.
Add the bean and cheese mixture to the chopped tomato combination, stir
in the single cream and place in the refrigerator to chill.
