Black-eyed Pea Dip
1 can black-eyed peas -- (15 1/2 oz.)
1/4 cup fresh parsley -- packed
2 tablespoons lemon juice
2 tablespoons olive oil -- (or less)
1 1/2 teaspoons garlic -- chopped
1 1/2 teaspoons chopped fresh tarragon -- (or 1/2 t dried)
1/4 teaspoon freshly ground pepper
salt to taste
Place everything in food processor and process till smooth.
