Black-eyed Pea Soup

1/4 lb. bacon, cut into pieces
2 c. chopped celery
2 c. chopped green bell pepper
2 c. chopped onion
2 cans tomatoes (or 1 lg. can)
2 (1 lb.) cans black eyed peas
Salt & pepper

Saute bacon with celery, green pepper and onion. Add tomatoes and peas. Simmer 30 to 45 minutes. Optional: can add sausage, lentils, other beans and peas.
