Black Soy Bean Hummus

1 clove garlic -- PLUS 1 teaspoon powdered garlic -- minced
15 ounces canned Eden Soy Organic Black Soy Beans -- drained
1 small yellow onion
2 tablespoons lemon juice
1 1/2 tablespoons soy sauce -- low sodium
1 tablespoon balsamic vinegar
2 teaspoons Cajun seasoning
3 teaspoons green onions -- chopped


Serving Size: 4

Pierce top of unpeeled onion with fork in 2-3 places. Place in a small microwave dish. Microwave on high 2-3 minutes. Remove from microwave, peel and chop. Place the onion with all the remaining ingredients in a food processor, process until smooth. Before serving fold in green onions or use as a garnish. Serve with fat-free chips.
