Bean Plaki

1/2 lb. navy beans or northern beans
1 clove garlic, minced
1 sprig celery, chopped fine
Pinch of sugar
Chopped parsley
1 chopped onion
3 tbsp. oil
1/2 c. tomato sauce
2 c. water
Salt and pepper to taste

Bring beans to boil in water; drain. Add fresh water and cook slowly until almost done; drain. Saute onion, celery, and seasonings in oil for 5 minutes. Add tomato sauce, water, and beans; simmer 15 to 20 minutes until sauce and beans are cooked. (Cooked chick peas may be prepared in this sauce in place of beans.)
