Arroz Y Frijoles Colorados (Rice and Beans)
1/2 c Red beans; small, dried
2 1/2 c Water
1/2 ts Salt
1 1/2 c Coconut milk
1 tb Onion; chopped
1 Garlic clove
1 tb Sweet red peppers; chopped
2 ts Corn oil
1 c Rice
1/4 ts Thyme
Soak the beans in the water overnight. Simmer beans in
the same water with the salt over moderate heat until soft, about 45
minutes. Drain beans and reserve the liquid. Fry the onion, garlic
and sweet pepper in the oil for 1 minute. Add the rice and fry for 2
minutes, stirring constantly. Add the coconutmilk, beans and thyme.
Bring to a boil, then immediately reduce heat to low, cover the pan,
and simmer for 20 minutes. Stir once or twice during this process.
