Red Beans and Rice

1 lb Dried red beans
1 Meaty ham bone
2 lg Onions; chopped
1 c Parsley; chopped
3 Cloves (large) garlic; chopped
1 tb Salt
1 ds Red pepper
1 ts Black pepper
1/4 ts Sugar
1 ds Hot sauce
1/4 ts Oregano leaves
1/4 ts Thyme leaves
1 tb Worcestershire sauce
4 oz Tomato sauce
1 1/2 lb Ground Italian sausage; -cooked & drained

Soak beans overnight in water to cover. Pour beans & water into a pot & add ham bone. Add water to cover. Cook slowly 3 hours. Add all other ingredients to beans except sausage. Cook uncovered 1 hour. Cool overnight, if possible. When ready to serve, warm with sausage & serve over rice. Serves 8.
