Basil Bean Salad

16 oz Great Northern Beans; Drained And Rinsed
1 Cucumber; Chopped
1 Red Bell Pepper; Chopped
Dressing:

2 tb Safflower Oil
2 tb Cider Vinegar
1 tb Lemon Juice
2 tb Fresh Basil; Chopped
1 tb Fresh Parsley; Minced
1/4 ts Black Pepper

In mixing bowl, combine beans, cucumber and red pepper. In a small bowl or measuring cup, combine dressing ingredients. Pour over bean mixture and toss. Using a slotted spoon, arrange on lettuce leaves on individual chilled salad plates. Garnish with chopped scallions.

Variation:

*Add chopped red onion to the salad
