Armenian Lentil Soup

1 c Chopped onion
1/2 c Sliced carrots
1/2 c Sliced celery
3 c Peeled; cubed eggplant
1 c Diced green pepper
3 -(up to) 6 Cloves garlic; minced
6 c Stock
1 1/2 c Lentils
1 1/2 c Chopped tomato
4 oz Dried apricots; sliced (yes!)
1/4 ts Cinnamon
1/4 ts Allspice
1/4 ts Cayenne
1 tb Paprika
1 1/2 ts Salt
3 tb Parsley
1 tb Mint

Saute onion, carrots, celery, eggplant, green pepper and garlic in oil until lightly browned. Add remaining ingredients except parsley and mint and simmer until lentils are tender. Add parsley and mint. Adjust seasonings to your taste.
