Curried Lentils

1 c Lentils
3 c Water or stock
2 lg Onions--chopped
Salt to taste
3 tb Butter or oil
1 Garlic clove--minced
1 ts Curry powder

Combine the lentils and water. Add 1 of the onions and salt and bring to a boil. Reduce the heat and simmer, covered, until the lentils are tender--30 to 40 minutes. Drain. In a skillet heat the butter, add the remaining onion and the garlic and cook till they begin to brown. Add to the lentils. Add the curry powder and cook till lentils are very tender--about 10 minutes longer. Serve plain or in a border of rice that has been garnished with sliced lemon or sliced chicken.
