Red Bean Relish

2 tb Olive oil
1/4 c Diced andouille sausage
1/4 c Chopped green onions
1/4 c Chopped celery
2 tb Minced red bell peppers
2 tb Peeled chopped tomatoes
2 ts Minced garlic
1 ts Creole Seasoning
1 c Cooked red kidney beans
Salt and black pepper


Heat oil in a medium skillet over medium-high heat. When oil is hot, add sausage, green onions, celery, bell peppers, tomatoes, garlic and Creole seasoning; sautJ 2 minutes. Stir in beans, salt, and 3 turns of pepper; saute 1 minute more.

Yield: about 2 cups
