Lemon Mint Soy Beans

2 1/2 c Soy beans
1/2 bn Fresh mint
1 lg White onion
2 Lemons

3 tb Olive oil
1 Lemon; juiced
1 ts Ground cummin
1/2 ts Curry powder
1/2 ts Ground mustard
1/2 ts Salt
2 cl Garlic; crushed

Soak beans in water overnight - they will double in size. Drain. Cover with fresh water in a saucepan and boil till soft - approx. 1 1/2 hours. Drain Blend all ingredients for the dressing and pour over the beans while they are hot. Pick mint off stalks and roughly chop, mix in. Grate in rind of one lemon.
