Black-eyed Pea Stew
1 c Black eyed peas, cooked
1 ea Onion, sliced
2 ea Tomatoes, chopped
1/2 ea Chili, chopped
1 tb Palm oil*
Salt and pepper to taste
Mash the cooked beans & set aside. Heat the oil in a pan & cook the
onion & tomatoes a little before adding the mashed beans, chili & the
rest of the seasonings.
Let the mixture cook for 10 minutes or so until it combines well.
Stir from time to time & add a little water if it becomes too dry.
Serve hot with mashed yams, fried plantains or rice.
*Use vegetable oil in place of palm oil
