Red Beans and Rice
1 lb Dried red beans -- soaked Overnight
1 Meaty ham bone
2 lg Onions -- chopped
1 Bell pepper -- chopped
2 Ribs celery -- chopped
1/4 c Parsley -- chopped
2 Cloves garlic -- finely Chopped
Salt and pepper -- to taste
2 lb Sausage links -- your Choice
Combine all except parsley and cook until beans are done. Serve over
rice. Add parsley just before serving. Variation: Omit ham bone and
sausage and use a center slice of ham, cut in small pieces.
