Black-eyed Pea Skillet

2 tb Vegetable oil
1 lb Turkey; ground
1 1/2 c Onion; chopped
1 c Green bell pepper; chopped
32 oz Cans black-eyed peas; drained
14 1/2 oz Tomatoes; whole, undrained and coarsely chopped
1/2 ts Salt
1/4 ts Black pepper


In a large skillet, heat the oil over medium heat; add the ground turkey, onion, and green bell pepper and cook until teh turkey is browned, stirring to crumble the meat. Drain off the liquid. Add the remaining ingredients; bring to a boil, reduce heat, and simmer for 30 minutes, stirring often.
