Arizona Beans and Beef

1 lb (500 g) pinto beans (about 2 1/2 cups), rinsed, picked over
Two 10 oz (284 mL) cans beef broth
2 1/2 cups water
5 1/2 oz (156 mL) can tomato paste
1 lb (500 g) lean ground beef, cut into 1-inch cubes
1/4 lb (125 g) salt pork, diced
1 medium onion, chopped
2 cloves garlic, minced
1 tbsp chili powder
1 tsp cumin seeds
1/2 tsp each: dried thyme, red pepper flakes
Salt and pepper

Place all ingredients in slow cooker; cover and cook on low setting 12 hours or until beans are tender. Season to taste with salt and pepper.

Makes 8 to 10 servings.
