Lima Bean and Kielbasa Soup 1 16 ounce package dried lima beans sorted and rinsed
1 pound kielbasa sausage cut into 1/4 inch slices
2 medium carrots cut into 1/4 inch slices
2 medium stalks celery cut into 1/4 inch sliced
1 large onion chopped
2 cloves garlic finely chopped
6 cups water
1 teaspoon salt
1/2 teaspoon pepper
1 14 1/2 ounce can diced tomatoes undrained
Mix all ingredients except tomatoes in 5-6 quart slow cooker. Cover and cook on high heat setting 10-12 hours or until beans are tender. Stir in tomatoes.
