Tortellini Stew 1 pound Italian sausage -- crumbled
1 medium sweet onion -- chopped
2 medium zucchini -- cut into 1" cubes
2 cans chicken broth -- 14 1/2 oz each
2 cans diced or whole tomatoes (broken up) -- canned, 14 1/2 oz each
15 1/2 ounces Great Northern Beans -- drained and rinsed
2 tablespoons fresh basil or 2 tsp. dried
1/4 teaspoon salt
1/4 teaspoon pepper
8 ounces tortellini -- cheese-filled
In a skillet, sauté the sausage until browned, drain, then add to the slow cooker with all ingredients except tortellini. Mix well. Cover and cook on low setting for 5 hours.
