Hot Sausage and Bean Stew
1 lb. dried pink beans
2 tsp. chili powder
1 onion, chopped
1 yellow or orange bell pepper, chopped
1 clove garlic, crushed
2 tbsp. chopped cilantro
1 (15 oz. ) can peeled diced tomatoes with juice
1 fresh jalapeno chile, seeded and chopped
3 cups hot water
1/4 lb. spicy or hot bulk pork sausage
Combine all ingredients except sausage in a slow cooker. Meanwhile, lightly brown sausage in a med. skillet over med. heat; drain off fat. Add browned sausage to bean mixture. Cover and cook on low 8-9 hrs. or until beans are tender.
