White Bean Fiesta Stew 1 lb. dried white beans
3/4 cup lentils
4 cups water
2 cloves garlic, minced
3 links andouille sausage, sliced
1 medium onion, chopped
3 stalks celery, chopped
1 (10-oz. ) can Ro-tel tomatoes
1 tsp. salt
1 tsp. ground black pepper
Chopped green onions for garnish, optional
Soak white beans overnight. Drain beans and put into slow cooker; add lentils, water, garlic, sausage, onions, celery, salt, black pepper and Ro-tel tomatoes. Cook on low for 8 hours.
