Beef in Black Bean Sauce

1 tb Vegetable oil
1 Clove garlic; crushed
1 tb Grated fresh ginger
1 Onion; finely sliced
350 g Lean rump steak; cut into strips
2 ts Sesame oil
1/2 Red capsicum; seeded & sliced
90 g Bean sprouts
60 g Snow peas
1 1/2 tb Black bean sauce
1 tb Soy sauce
1/4 c Beef stock
1 ts Sugar
1 ts Cornflour; blended with
1 tb Water


Heat vegetable oil in a wok or frying pan. Add garlic and ginger and stir-fry for 1 minute. Add onion and beef and stir-fry for 3 minutes or until beef is browned. Remove meat mixture from pan and set aside.

Heat sesame oil in pan, add capsicum, bean sprouts and snow peas and stir-fry for 1 minute. Add black bean sauce, soy sauce, stock, sugar and cornflour mixture. Cook, stirring, until mixture thickens slightly. Return meat mixture to pan. Cook for 2 to 3 minutes longer or until heated through.
