Black Bean "salsa"
1 cn Black beans; cooked, rinsed and drained
1/2 c Corn kernels; cooked (I often steam frozen corn into the microwave for a few minutes; then rinse in cold water)
1 cn Tomatoes with green chilis; drained
2 Green onion; sliced
5 Cloves garlic; minced
2 tb Fresh or dried cilantro (coriander leaf)
1 ds Lime juice
Drain all ingredients well before combining. Mix well. Serve. Scoop up with baked corn chips or serve on a bed of greens.
