Best Cajun Red Beans and Rice in the World

1 pound red kidney beans,
1 large onion, chopped
1 bell pepper, chopped
5 ribs celery, chopped.
As much garlic as you like, minced
1 large smoked ham hock, or 1 big chunk of Creole-style pickle meat (pickled pork), or 3/4 lb. smoked ham, diced, for seasoning
1 to 1-1/2 pounds mild or hot smoked, or andouille sausage, sliced on the bias
1/2 to 1 tsp. dried thyme leaves, crushed
2 bay leaves
A few dashes Worcestershire sauce Creole seasoning blend, to taste; OR, red pepper and black pepper to taste
Salt to taste

Soak the beans overnight, they'll taste a little better, (but it's not necessary).

The next morning, drain beans in colander.

Pre-heat slow cooker for at least 5 minutes on high, (to prevent breakage when you put hot water in).

Put beans back in slow cooker, and cover beans with hot water from faucet, plus 2" higher. (You could use boiled water - the hotter the better is OK).

Put everything in the slow cooker between 6-7 am, on low heat. Serve anytime after 5 pm.
