Aromatic Rice, Beans and Greens

3 c Water
2 c Kale or spinach; packed
1 1/2 c Jasmine rice
1/2 ts Black pepper
1/2 ts Salt
1/4 ts Garlic powder
Red pepper flakes; to taste
1 15 oz can red kidney beans; drained & rinsed
1/4 c Parsley; chopped

Combine water, kale or spinach, rice and dried seasonings in a medium saucepan. Bring to simmer over medium-high heat. Stir once, cover, and cook over medium-low heat about 15 minutes. Stir in beans and parsley. Fluff rice with fork; turn off heat. Let stand for 5-10 minutes before serving. Makes 4-6 servings
