Balsamic Marinated White Beans

2 cups cooked dried white beans
1/4 cup extra-virgin olive oil
3 tablespoons balsamic vinegar
1 tablespoon minced shallots
1 teaspoon minced garlic
1 tablespoon finely-chopped parsley leaves
Salt -- to taste
Freshly-ground black pepper -- to taste


In a mixing bowl combine all the ingredients together. Mix well. Season with salt and pepper. Cover and let stand for at least 1 hour.


This recipe yields about 2 cups.
