New England Baked Beans

1 pound dried great northern or navy beans
1/4 pound salt pork -- cut up
1 large onion -- chopped - (1 cup)
1/2 cup molasses
1/3 cup brown sugar - (packed)
1 teaspoon dry mustard
1/2 teaspoon salt
1/8 teaspoon freshly-ground black pepper


Rinse beans. In a saucepan bring beans, 8 cups water, and 1/2 teaspoon salt to boiling; reduce heat. Simmer, covered , 1 1/2 hours. Pour beans and liquid into a bowl; cover. Chill overnight.

Drain beans, reserving 1 cup liquid; place in slow cooker. Add the 1 cup reserved liquid and stir in the remaining ingredients. Cover, cook on LOW for 12 to 14 hours. Stir before serving.
