Cajun Style White Beans and Rice

1 pound great northern white beans
3 bacon strips - (to 4)
1/4 cup chopped onions
1/4 cup chopped bell peppers
1/4 cup chopped celery
Salt -- to taste
Freshly-ground black pepper -- to taste
1/4 cup cooking oil


Let beans soak overnight in the refrigerator. Put all ingredients in slow cooker and cook on LOW about 4 hours. If the beans are cooked but the "gravy" is too thin, you may have to boil the beans on the stove until it is thicker. Serve over rice.
