Butterbeans

2 c Water
1 oz Lean ham; finely chopped
2 c Fresh or frozen butterbeans*; shelled
1/4 ts Salt
1/8 ts Pepper


*Use lima beans in a pinch.

Bring 2 cups water and ham to a boil in a saucepan; boil 5 to 10 minutes.

Add butterbeans, salt, and pepper; return to a boil. Cover, reduce heat, and simmer 45 minutes or until tender. Makes 4 servings.
