Black-eyed Peas

1 pound dried Black Eyed Peas picked over soaked overnight in 6 cups water
1/2 pound smoked Ham Hocks
1 cup Ham -- chopped
1 Onion -- sliced
1 whole Banana Pepper
1 teaspoon Salt


Place the peas and water in a pot over moderate heat and add the ham hocks, onion, hot pepper and salt. Bring to a boil, reduce heat to low and simmer for 1 to 1 1/2 hours, or until the peas and meat are tender. Remove the hot pepper. Remove skin and bones from the hocks and cut the meat into small pieces. Return the meat to the pot, add ham and heat for about 5 minutes.
